Instructions
  1. Heat 1 tablespoon olive oil in 12-inch nonstick skillet over medium-high heat and cook onion, pepper and zucchini, stirring occasionally, 4 minutes or until tender.
  2. Reduce heat to medium and stir in 1-1/2 cups sauce. Simmer, stirring occasionally, 5 minutes or until sauce is thickened.
  3. Evenly spread sauce mixture on tortillas, leaving a 1-inch border. Sprinkle evenly with cheese and fold in half; set aside. Clean skillet.
  4. Heat remaining 1 tablespoon olive oil in same skillet over medium heat and cook quesadillas, two at a time, turning once, 4 minutes or until golden brown and cheese is melted.
  5. Cut quesadillas into wedges and serve with remaining sauce, heated.

  1. Cook pasta as directed on package. Drain; keep warm.
  2. Meanwhile, melt butter in large skillet on medium heat 4-5 min. or until golden brownand nutty. Add garlic and red pepper; stir 1 min. until fragrant.
  3. Stir in sauce. Arrange shrimp over sauce in single layer; cover with lid. Cook 2-3 min.on medium heat or until shrimp are done. Add cooked pasta and parsley; toss gentlyuntil combined.

Instructions
  1. Set electric pressure cooker to Sauté for 10 min. Add 1 tablespoon oil to insert; heatuntil shimmering. Meanwhile, season beef with salt & pepper. Working in batches,brown meat on all sides. Transfer to clean bowl.
  2. Add remaining oil, mushrooms and onions to insert. Cook 2-3 min. or until slightlysoftened, stirring frequently. Stir in broth and Worcestershire; gently scrape anybrowned bits with wooden spoon. Return beef and any cooking juices to insert. Addcarrots, celery, thyme and sauce. Stir well. Close and lock lid. Cook on High Pressurefor 30 min.
  3. Quick release any remaining pressure. Carefully remove lid. Stir in frozen peas.
Recipe Notes

TIP:

For a thicker stew, stir 1 tablespoon cornstarch combined with 1 tablespoon water into prepared stew. Cook on Sauté for 2 min. while stirring until slightly thickened.

To Prepare on the Stovetop:

Brown meat and vegetables in hot oil in large pot or Dutch oven on medium heat, working in batches if necessary. Stir in all remaining ingredients except peas. Cover with lid. Simmer on low heat 1-1/2 hours or until beef is tender, stirring occasionally. Stir in peas.
