Instructions
  1. Place chicken breast cutlets in shallow baking dish. Season each side with salt and pepper.
  2. On a hot grill, cook one side for 5 minutes, then flip to the other side.
  3. Spread generous amount of sauce on each chicken cutlet.
  4. Add shredded Mozzarella on top of the sauce and close grill lid. Cook for another 7-8 minutes until cheese is melted and chicken is cooked through.
  5. While chicken is cooking, prepare zucchini noodles or "zoodles". Use spiralizer and shred zucchini.
  6. In medium saucepan, heat 1/2 cup sauce on medium high heat for 5 minutes. Pour hot sauce directly over zucchini noodles.
  7. Remove chicken from grill and serve hot with zucchini noodles. Enjoy!
Recipe Notes

Tip: Always look for thinly sliced chicken breast when making Grilled Chicken Parmesan. The thin chicken breast is more tender and cooks faster and evenly. Ask the butcher to slice in half if possible.

Penne Primavera
Instructions
  1. Cook pasta in large pot as directed on package, omitting salt; keep warm.
  2. Place diced eggplant in single layer on a microwave-safe plate lined with a double-layer of paper towels. Microwave on HIGH 3 min. Cool and pat dry.
  3. Heat oil in same pot on medium-high heat; add onions. Cook 3-4 min. or until edges just start to brown, stirring constantly. Reduce heat to medium; add eggplant, zucchini, mushrooms and broth. Cook 3 min. while gently scraping browned bits from bottom of pan. Stir in sauce, hot pasta, Romano and half of shredded cheese. Cover and cook until heated through. Serve immediately, topped with remaining cheese and fresh chopped basil.

Tips:

Cremini mushrooms are also often called baby Portobello mushrooms. You can also substitute white button mushrooms.

Microwaving the eggplant eliminates the often tedious task of salting and draining it before cooking, without any added salt.

For a heartier main dish, add 2 pounds diced cooked chicken with the pasta sauce.

Slow Cooker Beef with Rigatoni
Instructions
  1. Add vegetables to slow cooker insert. Season beef on all sides with salt and pepper; place on top of vegetables. Combine sauce and broth; pour over meat. Cover with lid.
  2. Cook on LOW 8 hours (or on HIGH 4 hours) or until meat is fork-tender. During last 15 min. of cooking, remove meat from sauce. Skim sauce of excess fat; whisk in flour. Carefully cut meat or coarsely shred in large chunks and return to sauce to continue cooking. Gently toss meat mixture with hot cooked pasta and parsley.

Tip: Substitute a dry red wine like Chianti or cabernet for the broth.

Rustic Italian Bowls
Instructions
  1. Cook pasta as directed on package, omitting salt; keep warm.
  2. Heat oil and red pepper flakes in medium non-stick skillet on medium-high heat. Add onions; cook 3-4 min. or until softened, stirring frequently. Add peppers and zucchini; cook 3 min. or until vegetables are crisp-tender.
  3. Warm sauce in same pot on medium heat. Stir in greens and cook just until wilted. Stir in cooked pasta. Divide mixture among 6 serving bowls.
  4. Top evenly with vegetable mixture and remaining ingredients.

Tips: Substitute any of your favorite greens, like chopped rapini, Swiss chard or spinach for the kale mix.

Bowl toppings can be varied based on your families’ tastes. Other toppings that would work include: marinated quartered artichoke hearts, sliced olives, roasted red pepper strips, meatballs, roasted garlic cloves, shredded Parmesan or mozzarella cheese and chopped fresh basil.

For a shortcut, use a store-bought rotisserie chicken. An average sized chicken yields about 3 cups of meat.

  1. Cook spaghetti as directed on package, omitting salt; keep warm.
  2. Meanwhile, combine turkey, bread crumbs, half of the Parmesan, parsley, egg, ¼ cup water and salt. Shape mixture into 25, (1-1/4-inch) meatballs.
  3. Heat oil, garlic and crushed red pepper in large non-stick sauté pan on medium heat. Add sauce and remaining water once garlic is golden. Arrange meatballs in sauce; cover and cook 10 min. or until cooked through (165°F), stirring occasionally. Serve with hot cooked spaghetti and additional Parmesan, if desired.

Tips:
Use a small ice cream scoop to easily make evenly sized meatballs.

  1. Preheat oven to 350°F.
  2. Heat oil and onions in medium skillet on medium heat; cook 2-3 min. or until onions begin to soften. Add mushrooms; cook 5-7 min. or until liquid is evaporated and onions begin to brown. Add garlic; cook 30 seconds or until fragrant, stirring constantly. Remove from heat; cool slightly.
