  1. Preheat oven to 400°F. Process roasted peppers with sauce in blender; set aside.
  2. Dip chicken in 1/4 cup sauce mixture, then bread crumbs combined with cumin, chipotle powder seasoning and garlic powder, coating well.
  3. Arrange chicken in 13 x 9-inch baking dish. Bake uncovered 20 minutes.
  4. Pour remaining 3/4 cup sauce mixture over chicken; top with cheese. Bake an additional 10 minutes or until chicken is thoroughly cooked.
Recipe Notes

Tip: To roast pepper, arrange pepper in broiler pan lined with aluminum foil and broil, until blackened on all sides, turning occasionally, about 8 minutes. Wrap in foil and let cool; set aside.

  1. Preheat oven to 350°F.
  2. Heat oil and onions in medium skillet on medium heat; cook 2-3 min. or until onions begin to soften. Add mushrooms; cook 5-7 min. or until liquid is evaporated and onions begin to brown. Add garlic; cook 30 seconds or until fragrant, stirring constantly. Remove from heat; cool slightly.
  3. Stir 1 cup sauce and salt into skillet with onions. Combine sauce mixture, meats, egg, bread crumbs, Parmesan and parsley in large bowl.
  4. Shape mixture into 9x5 inch loaf; place on rimmed baking sheet lined with foil. Bake 1 hour 15 min. or until done (165°F), topping with additional ½ cup sauce and shredded cheese during the last 15 min. of baking. Let stand 5-10 min. before slicing and serving with remaining sauce.
Recipe Notes

Tip: Place a pan of hot water in the oven on the bottom rack to prevent the meatloaf from cracking.

  1. Combine ground beef, egg and bread crumbs in large bowl; shape into 20 (1-1/2-inch) meatballs.
  2. Brown meatballs in 12-inch nonstick skillet over medium-high heat.

  1. Preheat oven to 350°F. Combine ground beef, 1/3 cup Sauce, egg and bread crumbs in large bowl. Season, if desired, with salt and ground black pepper. Shape into 8 x 12-inch rectangle in 13 x 9-inch baking or roasting pan.
  2. Sprinkle 1-1/2 cups cheese and parsley down center leaving 3/4-inch border. Roll, starting at long end, jelly-roll style. Press ends together to seal.
  3. Bake uncovered 45 minutes. Pour remaining sauce over meatloaf and sprinkle with remaining 1/2 cup cheese. Bake an additional 15 minutes or until sauce is heated through and cheese is melted. Let stand 5 minutes before serving.
Recipe Notes

Tip: Molding the meat mixture onto waxed paper helps make rolling easier. Just lift waxed paper to curl the meat over cheese filling, then carefully remove meat from paper. Continue rolling in this manner until filling is enclosed in roll and meat is off paper.
