Stuffed Pizza Omelet


  • 1 tsp. vegetable oil
  • 4 large eggs, beaten
  • 1/2 cup cooked, coarsely chopped broccoli florets*
  • 1/2 cup shredded low fat mozzarella cheese
  • 1/2 cup Ragu® Sauce


  1. In large nonstick skillet, heat oil over medium-low heat and add eggs. With spatula, lift set edges of omelet, tilting pan to allow uncooked mixture to flow to bottom. When omelet is set and slightly moist, evenly sprinkle with broccoli, 1/3 cup cheese and 1/4 cup Sauce. Fold in half, then top with remaining cheese and Sauce. Reduce heat to low and cook covered 5 minutes or until omelet is set and cheese is melted.
*TIP: Use your favorite or leftover vegetables.
