BEEF-PICADILLO-LOADED BAKED POTATOES

Picadillo is a Spanish dish containing ground meat, tomatoes, onions and garlic.

Ingredients

  • 1 lb. ground beef
  • 1 small onion, chopped
  • 1 clove garlic, finely chopped
  • 1-1/2 tsp. ground cumin
  • 2 cups Ragu® Old World Style® Pasta Sauce
  • 1/3 cup golden raisins
  • 1/4 cup chopped pimiento-stuffed olives
  • 4 large potatoes, baked and cut in half 

Directions

  1. Brown ground beef with onion in 12-inch skillet, stirring occasionally, 8 minutes or until onion is tender. Add garlic and cumin. Cook, stirring occasionally, 2 minutes. Stir in Pasta Sauce, raisins and olives. Cook, stirring occasionally, 5 minutes or until heated through. Evenly top hot potato halves with ground beef mixture. Garnish, if desired, with diced avocado, sour cream and shredded cheddar cheese.
