TWICE-BAKED CHEDDAR HAM POTATOES

If time is short, ''quick-cook'' potatoes in the microwave!

Ingredients

  • 6 medium baking potatoes, unpeeled and baked
  • 1 jar (1 lb.) Ragu® Cheesy Double Cheddar Sauce
  • 1 cup frozen green peas, thawed
  • 1/4 lb. ham steak, chopped
  • 1/4 cup shredded cheddar cheese (about 1 oz.)

Directions

  1. Preheat oven to 400°.
  2. Cut a lengthwise slice from top of each potato. Scoop pulp from each potato leaving 1/2-inch-thick shells; set aside. Mash pulp in medium bowl, then stir in Double Cheddar Sauce, peas and ham. Evenly fill potato shells with potato mixture.
  3. Arrange stuffed potatoes on baking sheet and bake 15 minutes. Sprinkle with cheese and bake an additional 5 minutes or until heated through.
